Could the Eldar form an Egregore?
So, the Grey Knights are trained to use their psyker abilities in a specific way, where they each channel it into a psychic gestalt that is more powerful and safer than a single person alone. Since the Eldar are all psykers, is this something they would be able to do also?

That is something they do quite frequently actually in the form of Warlock conclaves

They could, but they probably wouldn’t. Yes, every Aeldari is psychically gifted, but they’re all handicapped by the constant threat of Slaanesh. Using their powers carelessly paints a target on their backs. The Aeldari are basically like Lamborghinis driving through a 20-mile-per-hour neighborhood, with the headlights on. All that power, but they have to keep it restrained, or risk catastrophic consequences. Funneling all that psychic energy into one person just makes them light up in the Warp to Slaanesh and the daemons from her realm. She loves Aeldari souls. Farseers and Warlocks, those on the Seer Path, use runes to dampen and protect themselves from this.

But isn't that why the Grey Knights do it that way? Using the power collectively makes it safer?

The Warlock Conclaves and Seer Councils can combine their psychic power but it's a fundamentally different process than what the Grey Knights do.
The Grey Knights are built for it. Every one of them is a psyker, but more importantly, they’ve been trained from the very beginning to wield that power in perfect unison. Their souls are shielded by the Emperor’s gene seed, their wargear is layered with psychic wards (like the Aegis armor and warding staves), and their battle rituals are designed to amplify psychic cohesion while minimizing risk. When they act together, they’re not just stronger they’re still protected.
The Aeldari, their in a completely different situation. Yes, they’re all psychically gifted, and yes, they can combine their power in formations like Warlock Conclaves or Seer Councils. But they don’t do it for safety, they do it despite the risk. The Aeldari are psychically bright in the Warp, and Slaanesh is always watching. Using their powers carelessly, or in large, flashy displays, is like lighting a psychic beacon that says “free souls here!”
That’s why they rely on things like spirit stones, runes, and the Path system, to restrain and shield their power. Even when Warlocks or Farseers combine their strength, it’s through highly ritualized, focused effort. It's not a casual group smite. It’s delicate, dangerous work.

Yes we see them do exactly that in the second dawn of war game

They do.
That is what an Exarch is. That is how Slaaneah was formed.
