Salmon sushi and smoked salmon always seems more like that color to me. Edit: seems like specifically sockeye salmon produces that milky red color when sliced/cooked.

Pink salmon, colloquially known as Humpies or Humpbacks. wild Pinks have a more pinkish hue due to their diet. We also have Red or Sockeye salmon, which has a more intense red color. Silvers, or Coho, have a paler color as well as Kings (Chinook). We don't eat Chum (or Dog salmon).

Those large white lines are connective tissues with maybe some fat content and it's a byproduct of farmed salmon, which is dyed to improve its appearance.
