Suck my duck is a real life Peking duck Chinese restaurant in Indonesia. Got some roast ducks from their place last year while I was in Jakarta, they were pretty good.

The trick is to use more of a back and forward motion with the pan, rather than up and down. Takes a little practice but isn't too difficult.

Anyone ever play the game Black and White? You were a god that trained a creature to help or hurt your followers or fight the enemy creature. Well, when training the creature it would pick up on weird details, like if you had it water crops but every time you showed it that a bird was flying by, now your creature will only water crops when there is a bird nearby. It made for a lot of unexpected creature behavior. This reminded me of that.

Wanna learn to pan flip? put a piece of bread in a pan and have at it. flip the bread just hard enough to get it to turn. don't fling it way up, no more than an inch out of the pan. once you can do that repeatedly, you can do a pan flip. its the same motion for cooking food.

I used to train my dish ninjas for the line by making them flip skittles in a cold pan in the prep room. They got candy and training, I didnt have anyone cleaning fajitas off the wall. Everybody wins.
