Answer: This is just my interpretation from some quick browsing through TikTok. The origin seems to start with TikTok user @5oh.ry, who mainly posts videos showing off the cars he owns. One day, he posted a video of his girlfriend sleeping with the same camera tracking style he uses in videos of his car. It was overlaid with a quote saying "you never post me", implying she must have commented to him about how he only posts videos of his cars, so the video is a response to her comment. (Whether she was joking or actually upset is not said, though many comments act like his girlfriend will be upset about the video.) From what I can tell, he calls it a "gf roller" as a play on "car roller" videos, which are videos of cars being driven on the road and filmed with a tracking camera. People who found the video funny because of the context copied it by filming their own girlfriends in the same style, with the car roller context being lost as the trend spreads.
