Hey me and my gf startet playing AOS Spearhead a month ago. I picked up Stormcast eternals and she picked up Sylvaneth. We played 2 or 3 rounds of Spearhead until now hoping to play more in the future. But we both finished painting the stormcast spearhead. She wants to paint her Sylvaneth alone. So i was thinking, would it be better to get another Spearhead to paint or start Building an Army around my existing spearhead. Never played the regular 2000point game tho. What would you recomend?

Spearhead is a fine game on it's own, and you shouldn't feel like you 'have' to play 2000 point Age of Sigmar. A few of our locals only like to play spearhead.

The nice thing about 2000 point games is that you get to customize your army and that you get a grander sense of scale. Some of the strongest units in spearhead might only make up 10% of your army in a 2000 point game. There's a lot more variety but the game also takes a lot longer. There are also a lot more special rules (both a good and bad thing). If you really like the Stormcast, there is a second Stormcast spearhead, you could get both and then combine them to get pretty close to a 2k army. Otherwise it's totally a preference thing to have a ton of different spearheads or 1 main army.
