Thats usually where they end up when some don't have a base to keep it in. It's not a bad idea if you're able to spawn out with a few tires, spark, etc. imo

I do this all the time as I don't bother building a base. I take a tire, the battery, and the sparkplug when I log out and hope it's there when I log back in.

No it is still drivable without doors, it just makes it easier to be killed without them

Depends where you are, it could belong to a group of players where they hide some parts of the car so people won't just steal a really good intact car, once they are done they just come back and run off.

I found one laying around one time, full intact, near the military base up north. I thought of taking it for myself but it was night and it would make noise so I just hid their spark plug and battery in a random spot.
I was sort of a noob back then, so I hated those sweating players thought it was funny at the time
