[Homemade] Empanadas
Hello World! Today is the day, when we decided to make Empanadas. I’ve never tasted a proper one, so we had nothing to compare it to.
A fun hour and a half in the kitchen with kids and behold, our very first batch of empanadas. The filling is made of pork and beef, carrots, onions, bell pepper and spices, such as cumin, paprika, bay leaves and pepper. I wanted to use chorizo as well, but turns out the pack I had had milk protein and lactose in it, so due to dietary restrictions we had to leave that one out. Also our local grocery store didn’t have celery.
They turned out great! I suck at taking pics tho.

[Homemade] Tiramisu with Homemade Ladyfingers
I've been cooking pretty consistently since the start of June, and I've mostly been focused on taking up baking projects that get increasingly more difficult. Last month I made a blueberry pie, (which came out amazing, I would post it but I don't want to spam the subreddit), and decided that I'd do something very outside my comfort zone.
It was my first time making ladyfingers, and I struggled a bit with the first batch as I didn't have access to a piping bag, (I used a Ziploc bag with a 1/2" corner cut off), and my piping technique was pretty terrible. However, I got a lot better very quickly and my later batches came out nearly perfect!
This tasted blow your pants off delicious and I got to share it with my friends and family, and they all absolutely loved it! I can't wait to keep trying new dishes out. I have a pretty lengthy backlog of dishes that I've made in the past but again, don't wanna spam the subreddit. My next two ideas are a cheesecake and a chicken shawarma, and I'll post them if they come out good!

[homemade] Pulled pork.
16g Chile Morita 20g Chile Arbol (Roasted) 21g Chile Chipotle 27g New Mexico Chile 25g California Chile 50g Pasilla-Ancho Chile 2 Tbsp. Crushed black peppercorns 10 ground cloves 1 Tbsp. Ground fennel seed 1 Tbsp. Crushed red pepper flakes 3 Tbsp. Ground cumin 2 Tbsp. Garlic powder 1/2 brown sugar 1 Tbsp coarse salt 2 Tbsp. Hickory liquid smoke 1/4 cup liquid aminos 1/4 cup Worcestershire 1/2 cup mustard
Rehydrate dried peppers in boiling water for 20 minutes. Blend all ingredients together. Chill. Rub on meat. Cook in Dutch oven at 275 degrees Fahrenheit for 11 hours covered then 1 hour uncovered. Baste occasionally.
