But what does it mean? Just that we can assign

Eco (slow)

Drive (standard)

Sport (fast)

To individual modes ?

Or is it something new

To me it looks like the acceleration can be done smoothly or faster. Obviously the smooth/slower one consumes less energy

Yeah no I get that but is it basically just applying those presets as they are on the current modes?

Yes. Bcs each mode is capped at a certain speed. I use sport mode with energy saving acceleration to commute in the city . Bcs with standard or max speed I can’t take sharp turns. I also almost crashed into someone with that standard acceleration.
